Ingredients
CHOCOLATE CHIP PUMPKIN COOKIES
- 2 Quest Bake Shop Chocolate Chip Muffins
- ½ cup almond flour
- 1 tsp pumpkin pie spice
- ¼ tsp salt
- ¼ tsp cinnamon
- 4 tbsp zero calorie sweetener
- 2 tbsp melted butter
- 1 egg, room temperature
- ¼ cup pumpkin puree
Icing:
Method
- Preheat the oven to 350 F. In a mixing bowl, break the muffin into small crumbles using your hands.
- Add in the almond flour, pie spice, salt and cinnamon and combine. In another bowl, whisk together the sweetener, butter, egg and pumpkin until smooth.
- Add the dry ingredients to the wet and stir until well blended.
- Use a 1 ½ tbsp cookie scoop to drop cookies onto a baking sheet lined with parchment paper (makes 12 cookies).
- Bake them for 16-18 minutes. Remove and let cool completely.
- Mix the icing together and spoon over cookies. Let the icing set and enjoy.
